How do i stop X from starting up every time i reboot my machine? it's surely not as simple as removing the 'S99gdm' script from '/etc/rc3.d'.....

in a word yes
that symlink tell initd (I think) to execute the thing it is porinting at with a post fix of start
unintalling gdm is another option

Even better practice is to rename the symlink to K<whatever> instead of S<whatever>

Init works roughly like this when changing runlevels
CODE

for i in /etc/rc$RUNLEVEL.d/K*
do
   $i stop
done

for i in /etc/rc$RUNLEVEL.d/S*
do
   $i start
done

so just deleting the S script doesn't guarantee that gdm gets stopped.

...just found out the official "debian" way of doing this is to take the
CODE
/usr/bin/gdm

line out of /etc/X11/default-display-manager ... in other words make it empty
